Two bunches soba noodles (sold in package with four bunches) cooked according to instructions and rinse in cold water.
1/2 cup chopped celery
1/2 cup chopped carrots
1/2 cup chopped peppers ( I like red, yellow and orange, but any will do)
1/4 cup chopped scallions
1/2 cup chopped cilantro
Dressing
1/4 cup sesame oil
1/3 cup Tamari (a naturally brewed Japanese soy sauce that is purer that it’s regular soy sister)
2 tblsp hot chili sauce ( I love heat, so adjust to your liking. You can start out with a little and add more if you like)
2 tblsp hoisin sauce
2 tblsp fresh grated ginger
2-3 garlic cloves chopped fine
Whisk dressing ingredients in a bowl until combined
In a large bowl, add cold soba noodles, carrots, peppers, celery and scallions. Toss with dressing to coat everything. Toss in cilantro
This is a flavor packed source of carbs. Top it with a lean protein or tofu, and you have a complete meal, with the fat from the sesame oil, carbs from soba noodles and veggies and, of course, your protein.
I can eat this every day.
