Ingredients:
Olive oil
4 garlic cloves chopped
1 medium red onion (white or yellow work fine) chopped
1 large can of crushed tomatoes
1 large can petite diced tomatoes
5 plus fresh basil leafs, chopped or cut into julienne threads just before added.
Pinch of sugar
Salt and pepper
Start with a heavy bottom pan. Give two good swirls of olive oil. Heat over medium high until shimmering. Add onions and cook until they begin to soften. Add garlic and stir until fragrant, about 30 seconds or so. Gently add tomatoes and stir and bring to a simmer.Add a pinch of sugar or natural substitute to balance the acidity. Lower heat to medium low. Let cook for 10 minutes or so. Julienne or chop basil and add to sauce. Stir. Season with salt and pepper to taste.
