Ingredients
Three medium to large sized potatoes cut into large chunks
Olive oil
5 pieces of cooked bacon (I prefer nitrate free) chopped
1/2 pint cherry tomatoes cut in half
1 head of romaine lettuce, cleaned and chopped
1/2 cup mayonaise (Hellman’s) – adjust to taste
1/4 cup sour cream – ajdust to taste
Kosher salt and fresh ground pepper
Pre heat oven to 375 degree
toss potatoes in olive oil and season with salt and pepper. Lay on sheet pan and roast in oven for 35-45 minutes, until tender. Remove from oven and cool.
In bowl add potatoes, bacon, and tomatoes. Add sour cream and mayo and mix well. Toss in lettuce to coat. Season with salt and pepper.
Serve at room temperature.
Recipe can be used as a side dish or a great main dish.
