2 cups cilantro leaves, washed
1/3 cup lime juice
1 teaspoon cumin
1/2 cup grapeseed oil
salt and pepper to taste
Put cilantro, lime and cumin in the food processor or blender and process until smooth. You may need to add a little water to break down the cilantro. With motor running, add oil in slow contant stream until inccorporated. Continue to process until smooth. Season with salt and peper. Adjust flavors according to taste.
Because of the lime juice in this marinade, you only want to marinade for about 30 minutes or so. If you marinade too long, the acid will start to cook or breakdown the meat.
After 30 minutes, shake off excess marinade and grill.
