Simple and delicious dressing, great for all kinds of greens.
3/4 cup grape seed oil (you can use a high quality olive oil if you like, but I prefer the cleaner taste of grape seed oil)
1/4-1/3 cup of grated Parmesan (to your liking)
3 tablespoons fresh lemon juice
1 shallot, minced
2 teaspoons Dijon mustard
1 – 1 1/2 teaspoons fresh thyme (to your liking)
1 garlic clove, minced
salt and pepper to taste
Put all ingredients into a mason ball jar with a tight fitting lid and shake until all ingredients are well incorporated. Chill. Re-shake before serving to recombined.
