{"id":381,"date":"2015-05-13T19:24:00","date_gmt":"2015-05-14T00:24:00","guid":{"rendered":"http:\/\/lifesafeastllc.com\/?p=381"},"modified":"2025-11-25T22:07:49","modified_gmt":"2025-11-25T22:07:49","slug":"recipes-from-lifes-a-feast-episode-3","status":"publish","type":"post","link":"https:\/\/lifesafeastllc.com\/caterers\/recipes-from-lifes-a-feast-episode-3\/","title":{"rendered":"Recipes from Life&#8217;s a Feast Episode 3"},"content":{"rendered":"<h2><img fetchpriority=\"high\" decoding=\"async\" class=\"alignright  wp-image-384\" alt=\"Vietnamese Style Banh Mi Sandwich\" src=\"http:\/\/lifesafeastllc.com\/catering\/wp-content\/uploads\/2015\/05\/IMG_1962-1024x768.jpg\" width=\"307\" height=\"230\" \/>Vietnamese Style Banh Mi Sandwich<\/h2>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong><\/strong><strong>Slaw:<\/strong><br \/>\n1\/2 cup water<br \/>\n1\/4 cup sugar<br \/>\n1\/4 cup distilled white vinegar<br \/>\n1\/2 cup julienned carrot<br \/>\n1\/2 cup julienned Daikon Radish<\/p>\n<p><strong>Seasoned Pork:<\/strong><br \/>\n1 teaspoon vegetable oil<br \/>\n1 tablespoon finely chopped onion<br \/>\n6 ounces ground pork<br \/>\n1 tablespoon roast pork seasoning mix available in Asian Aisle<br \/>\npinch of garlic<br \/>\npinch of black pepper<\/p>\n<p><strong>Sandwiches:<\/strong><\/p>\n<p>4 10 inch Baguettes<br \/>\nMayonnaise, as needed<br \/>\n8 thin slices of Vietnamese-style pork roll, or Bologna<br \/>\n8 thin slices of Vietnamese style salami, or ham or turkey<br \/>\n4 teaspoon soy sauce<br \/>\n1\/2 cup fresh cilantro sprigs<br \/>\n1\/4 medium English Cucumber, cut length wise in four slices<br \/>\nfreshly ground pepper<br \/>\nAsian style Chili Oil<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>Make the slaw: In a small saucepan, combine the water, sugar and vinegar and bring to a boil. Transfer vinegar mixture to a bowl and cool. Add carrot, daikon and mix well, then season with salt. Set aside to marinate for 30 minutes or store in the frig overnight<\/p>\n<p>Meanwhile, make seasoned pork. Heat oil in a small nonstick skillet over medium heat. Add the onion and cook stirring until soft, add the pork, seasoning, garlic and pepper and cook, stirring until just cooked through, about 2-3 minutes, remove from heat and cover with foil to keep warm.<\/p>\n<p>Make the sandwiches, Preheat oven to 400 degrees F, slice the baguettes open lengthwise and slather the insides with the mayo. Arrange the baguettes on a baking sheet and bake until hot and crusty, about 5 minutes. Remove the baguettes from oven and immediately fill each one with some of the seasoned pork, arrange 2 slices each of the bologna and salami, slaw, drizzle 1 teaspoon of soy sauce, sprinkle cilantro, place cucumbers, dash of ground pepper and a dash of chili oil. Serve.<\/p>\n<p>You can place Slaw on the side<\/p>\n<p>Prep Time: 20 min.<br \/>\nInactive Prep Time: 30 min.<br \/>\nCook Time: 15 min.<br \/>\nServes: 4<\/p>\n<hr \/>\n<p>&nbsp;<\/p>\n<h2><a href=\"http:\/\/lifesafeastllc.com\/catering\/wp-content\/uploads\/2015\/05\/IMG_1967.jpg\"><img decoding=\"async\" class=\"alignright size-medium wp-image-387\" alt=\"IMG_1967\" src=\"http:\/\/lifesafeastllc.com\/catering\/wp-content\/uploads\/2015\/05\/IMG_1967-300x225.jpg\" width=\"300\" height=\"225\" \/><\/a>Vietnamese Fresh Spring Rolls<\/h2>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 ounce rice vermicelli or Napa Cabbage<br \/>\n4 rice wrappers (8.5 inch diameter)<br \/>\n4 large cooked shrimp-peeled and deveined and cut in half<br \/>\n2 teaspoons chopped Thai Basil or regular basil<br \/>\n1 tablespoon + 1-1\/2 teaspoon chopped Mint<br \/>\n1 tablespoon + 1-1\/2 teaspoon chopped cilantro<br \/>\nHandful of chopped Napa Cabbage<br \/>\n2 teaspoons fish sauce<br \/>\n2 tablespoons water<br \/>\n1 tablespoon fresh lime juice<br \/>\n1\/2 garlic clove, minced<br \/>\n1 tablespoon white sugar<br \/>\n1\/4 teaspoon garlic chili sauce<\/p>\n<p><strong>Sauce:<\/strong><\/p>\n<h3>Hoisin Sauce<\/h3>\n<p>1\/2 teaspoon finely chopped peanuts or pistachios<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>Bring s medium saucepan of water to boil, boil rice vermicelli 3 to 5 minutes or until al dente and drain<br \/>\nFill a large bowl with warm water, dip one wrapper into the hot water for 1 second to soften<br \/>\n-lay wrapper flat<br \/>\n-In a row across the center, place 2 shrimp halves, a handful of vermicelli, basil, mint, cilantro and cabbage, leaving about 2 inches uncovered on each side.<br \/>\n-Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the cabbage.
