{"id":272,"date":"2012-11-13T17:29:15","date_gmt":"2012-11-13T23:29:15","guid":{"rendered":"http:\/\/lifesafeastllc.com\/?p=272"},"modified":"2025-11-25T22:07:49","modified_gmt":"2025-11-25T22:07:49","slug":"blt-potato-salad","status":"publish","type":"post","link":"https:\/\/lifesafeastllc.com\/caterers\/blt-potato-salad\/","title":{"rendered":"BLT Potato Salad"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>Three medium to large sized potatoes cut into large chunks<\/p>\n<p>Olive oil<\/p>\n<p>5 pieces of cooked bacon (I prefer nitrate free) chopped<\/p>\n<p>1\/2 pint cherry tomatoes cut in half<\/p>\n<p>1 head of romaine lettuce, cleaned and chopped<\/p>\n<p>1\/2 cup mayonaise (Hellman&#8217;s) &#8211; adjust to taste<\/p>\n<p>1\/4 cup sour cream &#8211; ajdust to taste<\/p>\n<p>Kosher salt and fresh ground pepper<\/p>\n<p>&nbsp;<\/p>\n<p>Pre heat oven to 375 degree<\/p>\n<p>toss potatoes in olive oil and season with salt and pepper. Lay on sheet pan and roast in oven for 35-45 minutes, until tender. Remove from oven and cool.<\/p>\n<p>&nbsp;<\/p>\n<p>In bowl add potatoes, bacon, and tomatoes. Add sour cream and mayo and mix well. Toss in lettuce to coat.
