Lemon Thyme Vinaigrette

This is one of my favorite salad dressings, and again, all made in one jar. A good quality extra virgin olive oil is key. Lower quality will lead to a bitter or ‘green’ taste that will overwhelm the dressing

3/4 cup good quality extra virgin olive oil
1/4 cup lemon juice
1 clove minced garlic
1 teaspoon fresh thyme, minced
1/4 cup shredded parmesan
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground pepper

Put all ingredients on a jar, put lid on tightly and shake. Adjust seasoning to taste. Store left over dressing in fridge.
I myself like a slightly more acidic dressing, so I will throw in a little extra lemon juice, so feel free to play with the amount to your liking.

This dressing is excellent with firmer lettuce such as romaine, but works with more delicate mixed greens as well.
